When I think of the summers of my youth I think of hot summer days and wedges of cool, refreshing watermelon dripping down
my chin. Now that I'm an official grown-up I figured I should share some more "adult" ways to enjoy watermelon. It is high season for watermelon right now so it is relatively inexpensive and oh so sweet and delicious. Below is a salad I came up
with that is both refreshing and unique not to mention a very colorful dish for
your table that frankly will just make you smile.
Watermelon Citrus Salad
6 cups watermelon – 1 inch
dice
1 cup thin sliced red onion
cut into 1-inch long strips
2 cups red grapefruit segments
– supreme – with out the pith and thin skin between the fruit – juice reserved
from when segmenting
¾ to 1 cup finely chopped
cilantro
A few pinches of sea salt
Combine all ingredients
including reserved juice toss gently
Chill for about an hour to
allow the flavors to marry
